We visited the Carbone venue in Las Vegas, located in the Aria Resort. Carbone's initial site was in NYC and they have successfully brought their Italian fare to Sin City!
Everything on this menu is authentic Italian and freshly prepared to order, so expect a little bit of a wait between courses.
The bread and free appetizers, which consist of hard salami, Parmigiana Reggiano cheese, a selection of breads and an awesome sautéed cauliflower, is by itself worth the price of admission. Let's face it free is good, lol.
For our real appetizer, we shared the "Spicy Rigatoni" which was off the charts! There is nothing better in this world or the next, than a fresh pasta with a homemade spicy sauce. It was incredible.
We also had their house salad, which was also up to the mark.
Our main course of Chicken Scarpariello and Veal Parmesan were perfectly prepared and presented.
My only criticism is that I was going to have the pork chops with peppers, and asked if they could substitute the hot peppers for the sweet and was told ZERO substitutions. Really? This was disappointing, as they had the hot peppers on the menu.
I was tempted to ask the waiter to "take me to his leader" but I was in a "User Friendly" mood.
The deserts were also a hit and capped of a wonderful eating experience. #WeShallReturn
